Churchill Downs Executive Chef, Joseph “Jo Jo” Doyle, is a very busy man especially during this Derby Week, but he says efforts to put more Kentucky grown products on the track’s elaborate buffet tables have been greatly enhanced by the Kentucky Proud program.
